Chef Ben Bayly’s passion for Italian cuisine was shaped by his time in the Aosta Valley, where he immersed himself in alpine traditions and rustic flavours. Drawing on his New Zealand experience, he blends authentic Northern Italian techniques with local Central Otago ingredients to create Aosta’s distinctive dining experience.
